– ½ cup sour cream
– ¼ cup granulated sugar
– 1 teaspoon vanilla extract
– ½ cup chopped walnuts or pecans (optional)

Instructions:

Watermelon Salad:
1. In a small bowl, whisk together the olive oil and lime juice for the dressing.
2. In a large bowl, combine the cubed watermelon and cucumber.
3. Pour the dressing over the watermelon and cucumber mixture.
4. Gently toss to coat all ingredients evenly.
5. Add the crumbled feta cheese and fresh mint leaves.
6. Toss gently once more to distribute the ingredients.
