Ingredients
- 1 lb shrimp, peeled and deveined
- 1 smoked beef sausage, sliced
- 4 corn cobs, cut into halves or thirds
- 1–1½ lbs baby potatoes
- 4 cups water or chicken broth
- 3 tbsp seafood seasoning (like Old Bay)
- 1 lemon, sliced
- 3 cloves garlic, minced
- 2 tbsp butter
- Optional: parsley, extra lemon wedges, Cajun seasoning
Instructions
- Add potatoes, corn, sausage, garlic, lemon, seasoning, and broth/water to the crock pot.
- Cook on LOW for 5–6 hours or HIGH for 3–4 hours, until potatoes are tender.
- Stir in shrimp during the last 20–30 minutes of cooking, until pink and cooked through.
- Add butter and stir gently.
- Serve hot with extra lemon and parsley if desired.
Tips
- Shrimp cooks quickly, so don’t add it too early.
- For extra spice, add Cajun seasoning or red pepper flakes.
- Serve with crusty bread or rice to soak up the broth.
