• 2 medium eggplants, sliced into 1cm rounds
• 1 tsp salt
• 2 large eggs
• 1 cup gluten-free breadcrumbs
• ½ cup grated parmesan cheese
• 1 tsp garlic powder
• 1 tsp dried oregano
• 1 tsp dried basil
• 2 cups marinara sauce
• 1½ cups shredded mozzarella cheese
• Olive oil spray

1ļøāƒ£Ā Sprinkle eggplant slices with salt, let sit 20 mins, then pat dry.
