Ā Ingredients:
⢠2 medium eggplants, sliced into 1cm rounds
⢠1 tsp salt
⢠2 large eggs
⢠1 cup gluten-free breadcrumbs
⢠½ cup grated parmesan cheese
⢠1 tsp garlic powder
⢠1 tsp dried oregano
⢠1 tsp dried basil
⢠2 cups marinara sauce
⢠1½ cups shredded mozzarella cheese
⢠Olive oil spray
Ā Directions:
Ā Sprinkle eggplant slices with salt, let sit 20 mins, then pat dry.
Ā Beat eggs in one bowl; mix breadcrumbs, parmesan, garlic, oregano & basil in another.
Ā Dip slices in egg, then in breadcrumb mix.
 Preheat air fryer to 190°C (375°F).
Ā Spray slices with olive oil, air fry 6ā8 mins per side until golden & crispy.
Ā Layer in a dish: eggplant ā marinara ā mozzarella. Repeat and finish with cheese.
Ā Air fry again at 180°C (350°F) for 5ā7 mins, until bubbly perfection!Ā ![]()
