Classic Chicken Salad
Ingredients:
– 2½ cups precooked chicken, diced
– ½ cup red onion, finely chopped
– ½ cup mayonnaise
– ¼ cup plain Greek yogurt
– 2 celery stalks, chopped
– 1 tbsp fresh dill, minced
– 1 tbsp lemon juice
– 1 tbsp lime juice
– 1 tsp garlic powder
– 1 tsp lemon pepper
– ½ – 1 tsp salt to taste
– ¼ cup chopped walnuts or pecans (optional, for crunch)
– 2 tbsp fresh parsley, chopped
Instructions:
1. In a large bowl, combine the diced chicken, red onion, and celery.
2. In a separate small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, lime juice, garlic powder, lemon pepper, and salt.
3. Pour the dressing over the chicken mixture and gently fold until well combined.
4. Stir in the fresh dill, parsley, and optional nuts.
5. Taste and adjust seasoning as needed.
6. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
