Crispy, cheesy, and oh-so-satisfying — this gluten-free twist on a classic Italian favorite is light, flavorful, and done in under an hour!

🥣 Ingredients:
• 2 medium eggplants, sliced into 1cm rounds
• 1 tsp salt
• 2 large eggs
• 1 cup gluten-free breadcrumbs
• ½ cup grated parmesan cheese
• 1 tsp garlic powder
• 1 tsp dried oregano
• 1 tsp dried basil
• 2 cups marinara sauce
• 1½ cups shredded mozzarella cheese
• Olive oil spray

👩‍🍳 Directions:
1️⃣ Sprinkle eggplant slices with salt, let sit 20 mins, then pat dry.
2️⃣ Beat eggs in one bowl; mix breadcrumbs, parmesan, garlic, oregano & basil in another.
3️⃣ Dip slices in egg, then in breadcrumb mix.
4️⃣ Preheat air fryer to 190°C (375°F).
5️⃣ Spray slices with olive oil, air fry 6–8 mins per side until golden & crispy.
6️⃣ Layer in a dish: eggplant → marinara → mozzarella. Repeat and finish with cheese.
7️⃣ Air fry again at 180°C (350°F) for 5–7 mins, until bubbly perfection! 🧀
8️⃣ Serve hot with extra marinara if desired. 🍅
