Zucchini muffins – light, convenient and perfect for any time of day!

:

1 medium grated zucchini (with skin)
2 eggs
1/2 cup grated cheese (mozzarella, parmesan, or whatever you have!)
1/2 cup rolled oats or oat bran
1/2 teaspoon baking powder
Salt, pepper, and spices to taste (oregano, turmeric, etc.)
A drizzle of olive oil (optional)

Prepare the zucchini: Grate the zucchini and squeeze it well to remove any excess water.
Mix the batter: Mix all ingredients in a bowl until you get a smooth batter.
Fill the muffin cups: Pour the batter into greased muffin cups (or use silicone baking cups).
Bake: Bake in a preheated oven at 180°C for about 25-30 minutes, until golden brown.
Tip: You can add chicken pieces, carrots, or even a spoonful of quark!

If you want to give the zucchini muffins even more flavor, you can season them with a little garlic or fresh herbs like basil or thyme. A small amount of roasted sunflower seeds or walnuts in the batter gives the muffins a nice texture and a nutty flavor.
