1 pound of Italian sausage, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup of shredded mozzarella cheese
1 cup of shredded cheddar cheese
1 tablespoon of olive oil
1 teaspoon of Italian seasoning
Salt and pepper to taste
Directions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned.
Add the sliced bell peppers to the skillet and sauté until they start to soften, about 5 minutes.
Season the sausage and pepper mixture with Italian seasoning, salt, and pepper.
Transfer the mixture into two foil containers or a baking dish, spreading it out evenly.
Sprinkle the shredded mozzarella and cheddar cheese over the top of the sausage and pepper mixture.
Place the containers in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly.
If you like a crispy top, switch the oven to broil for the last 2-3 minutes, keeping a close eye to prevent burning.
Remove from the oven and let it cool slightly before serving.

Feel free to experiment with different types of sausages, like spicy chorizo or chicken sausage for a lighter option. You can also add mushrooms or zucchini for extra veggies.
