Sweet Mexican Pancakes

Easy Sweet Mexican Pancakes (Hotcakes)
Ingredients:

1½ cups flour
3 tbsp sugar
1 tbsp baking powder
½ tsp salt
1 tsp cinnamon (optional)
1¼ cups milk
1 egg
3 tbsp melted butter
1 tsp vanilla

Mix Dry Ingredients: In one bowl, stir flour, sugar, baking powder, salt, and cinnamon.
Mix Wet Ingredients: In another bowl, whisk milk, egg, butter, and vanilla.
Combine: Pour the wet into the dry and gently mix (a few lumps are okay!).
Cook: Heat a non-stick pan over medium, add a little butter, and scoop about ¼ cup batter per pancake. Cook until bubbles form, flip, and brown the other side.
Serve Warm: Add toppings like honey, fruit, or dulce de leche.
