Strawberry Cheesecake Pound Cake

1. Prep & Preheat

  • Preheat oven to 325°F (165°C).

  • Grease and flour a 10-12 cup Bundt pan or two loaf pans.

2. Make the Cheesecake Filling

  • In a bowl, beat cream cheese until smooth.

  • Add sugar, egg, and vanilla, mixing until creamy. Set aside.

3. Make the Pound Cake Batter

  • In a large bowl, cream butter and sugar until light and fluffy (~4 mins).

  • Add eggs one at a time, mixing well after each.

  • In another bowl, whisk flour, baking powder, and salt.

  • Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with flour.

  • Stir in vanilla extract and fold in diced strawberries.

4. Layer & Swirl

  • Pour half of the pound cake batter into the pan.

  • Spoon cheesecake filling over the batter, avoiding the edges.

  • Top with the remaining batter.

  • Use a knife to gently swirl the layers.

5. Bake

  • Bake for 60-75 mins (or until a toothpick comes out clean).

  • Cool in the pan for 15 mins, then invert onto a wire rack.

6. Glaze (Optional)

  • Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake.
