Instructions
1. Boil the Potatoes
Place potatoes in a large pot and cover with water. Add enough salt so the water tastes pleasantly salty. Bring to a boil and cook until just tender — do not overcook.
Tip: Boil potatoes with skins on. Once slightly cooled, rub the skins off.
2. Prepare the Potatoes
Cut the peeled potatoes into chunks once cool enough to handle.
3. Add the Veggies and Eggs
Add chopped eggs, red onion, celery, and green pepper to the potatoes. Gently toss together.
4. Make the Dressing
In a separate bowl, whisk together the brown sugar, sweet pickle relish, mayonnaise, and mustard until smooth.
5. Combine
Pour the dressing over the potato mixture. Mix gently until everything is well coated.
6. Season and Chill
Season with salt and pepper to taste. Cover and refrigerate until ready to serve.
