Oatmeal Peanut Butter Chocolate

Step-by-Step Instructions

 

Step 1: Prepare the Pan

  1. Line an 8×8-inch or 9×9-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

Step 2: Make the Oat Mixture

    1. In a large saucepan, melt the butter over medium heat.
    2. Stir in the brown sugar and vanilla extract until the sugar is dissolved.
  1. Add the rolled oats and shredded coconut (if using). Mix until well combined.

Step 3: Assemble the Bars

  1. Press half of the oat mixture into the bottom of the prepared pan, using a spatula or your hands to create an even layer.

Step 4: Make the Chocolate Layer

    1. In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  1. Pour the chocolate mixture over the oat layer, spreading it evenly.

Step 5: Add the Topping

  1. Sprinkle the remaining oat mixture over the chocolate layer, pressing gently to adhere.

Step 6: Chill and Set

    1. Refrigerate the bars for at least 2 hours, or until firm.
  1. Use the parchment paper to lift the bars out of the pan. Cut into squares and serve.
