Oatmeal Peanut Butter Chocolate
Step-by-Step Instructions
Step 1: Prepare the Pan
- Line an 8×8-inch or 9×9-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: Make the Oat Mixture

- In a large saucepan, melt the butter over medium heat.
- Stir in the brown sugar and vanilla extract until the sugar is dissolved.
- Add the rolled oats and shredded coconut (if using). Mix until well combined.
Step 3: Assemble the Bars
- Press half of the oat mixture into the bottom of the prepared pan, using a spatula or your hands to create an even layer.
Step 4: Make the Chocolate Layer

- In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Pour the chocolate mixture over the oat layer, spreading it evenly.
Step 5: Add the Topping
- Sprinkle the remaining oat mixture over the chocolate layer, pressing gently to adhere.
Step 6: Chill and Set

- Refrigerate the bars for at least 2 hours, or until firm.
- Use the parchment paper to lift the bars out of the pan. Cut into squares and serve.
