My mother used to make this, and it was delicious.

Ingredients
Potato Crescendo:

4 large starchy potatoes, peeled and sliced

60 ml olive oil

1 tsp garlic powder

1 tsp paprika powder

Salt and pepper to taste

Onion Overture:

2 large onions, thinly sliced

2 tbsp balsamic vinegar

1 tbsp honey

2 tbsp olive oil

Salt and pepper to taste

Preparation:
Preheat the oven: Preheat the oven to 220 °C (top/bottom heat).

Prepare the Potato Crescendo:
In a large bowl, toss the potato slices with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

Marinate the Onion Overture:
In a separate bowl, mix balsamic vinegar, honey, olive oil, salt, and pepper. Add the onion rings and toss until they are evenly coated.

Assemble and bake:
Spread the seasoned potato slices in a single layer on a baking sheet. Generously sprinkle the marinated onions over the top.
Bake in the preheated oven for about 30–35 minutes, until the potatoes are golden brown and crispy.
