Mini Egg Muffins with Sausage & Veggies

🧑‍🍳 Instructions:

  1. Preheat oven to 180°C (350°F).
  2. Grease a muffin tin with oil or cooking spray.
  3. Add chopped vegetables (bell pepper, onion, spinach) and cheese. Mix well.
  4. In a mixing bowl, whisk the eggs with milk, salt, pepper, and optional seasonings.
  5. Pour the mixture evenly into muffin cups, filling each about 3/4 full.Steamed Fish with Spicy Lime and Garlic Sauce
  6. Top each cup with a slice or two of sausage.
  7. Bake for 18–22 minutes, or until the eggs are set and golden on top.
  8. Let them cool slightly, then remove from the tin.
