Potatoes (peeled and cut into pieces) 1 1/2 pounds
Heavy whipping cream 1/4 cup
Cheddar cheese (shredded) 1 cup

Instructions:
Prepare the Meatloaf:
Preheat oven to 375°F (190°C).
Sauté onion and garlic in olive oil until softened.
Combine ground beef, breadcrumbs, tomato sauce, egg, BBQ sauce, cooked onion/garlic mixture, peas, parsley, salt, and pepper in a large bowl.
Transfer meat mixture to a loaf pan or shape into a loaf on a parchment-lined baking sheet.
Bake for 45-50 minutes, or until internal temperature reaches 160°F (70°C).
Make the Mashed Potatoes:
Boil peeled and cut potatoes until tender.
Drain potatoes and return to pot.
Add butter, heavy whipping cream, salt, and pepper.
Mash potatoes until smooth and creamy.
Assemble and Serve:
Let meatloaf rest for 5 minutes before slicing.
Top mashed potatoes with shredded cheddar cheese.
Serve slices of meatloaf with mashed potatoes. Optionally, broil mashed potatoes with cheese for a melted and bubbly topping.
