Instructions
Step 1: Prepare the Mashed Potatoes
- Place potatoes in a large pot, cover with water, and add a pinch of salt.
- Bring to a boil and cook until fork-tender (about 15–20 minutes).
- Drain and return to the pot. Add butter, warm cream, and milk. Mash until smooth and creamy. Season with salt and black pepper to taste. Keep warm.
Step 2: Cook the Beef Bites
- Pat steak cubes dry with paper towels. Season generously with salt and black pepper.
- Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
- Add beef cubes in a single layer (cook in batches if needed). Sear for 2–3 minutes per side until golden brown and cooked to desired doneness. Remove from skillet and set aside.
- In the same skillet, add remaining butter and garlic. Sauté until fragrant, about 30 seconds. Add fresh thyme.
- Return beef to skillet and toss in garlic butter until coated.
Step 3: Serve
- Spoon creamy mashed potatoes onto plates.
- Top with garlic butter beef bites and drizzle extra sauce from the pan.
- Garnish with fresh parsley and serve immediately.
