Heat the oil
Pour 2–3 inches of vegetable oil into a heavy-bottomed pan or Dutch oven. Heat to 375°F (190°C) with a thermometer, about 10 minutes. -
Prepare the breading station

In one bowl, mix flour, salt, pepper, paprika, cayenne, and garlic powder.

In another bowl, whisk together buttermilk and egg.

Bread the pickles
Working in small batches:-
Coat pickle slices in seasoned flour.

Dip in the buttermilk and egg mixture.

Return to flour for a second coating.

Fry the pickles
Gently lower coated pickles into hot oil. Fry about 90 seconds per side until golden and crisp.
Transfer to a paper towel-lined plate. Allow oil to return to 375°F before frying the next batch. -
Make the dipping sauce (optional)
Mix all sauce ingredients in a small bowl until smooth.
