Prepare the Dough
Stir the lukewarm milk with 1 tablespoon of sugar and the yeast until smooth.
In a large bowl, combine flour, melted butter, the remaining sugar, and egg yolk.
Add the yeast-milk mixture and knead everything into a smooth dough using the dough hooks of a hand mixer.
Cover the dough and let it rise in a warm place for about 45 minutes. -
Prepare the Filling
Wash the plums, halve them, remove the pits, and cut into small pieces.
Heat 3 tablespoons of water in a saucepan, then add the plums and simmer over medium heat until the liquid has evaporated.
Mix the cornstarch with a little cold water until smooth, stir it into the plums, and briefly bring to a boil.
Sweeten with 2 tablespoons of sugar, stir well, and let the mixture cool. -
Assemble the Swirls
Knead the dough briefly on a lightly floured surface, then roll it out into a rectangle about 20 x 30 cm in size.
Mix 1 tablespoon sugar with ground cloves, cinnamon, and chopped almonds. Sprinkle this mixture over the dough.
Spread the cooled plum compote on top. -
Shape and Bake
Roll the dough up tightly from the long side. Cut into 6 slices.
Place the slices cut side up on a baking tray lined with baking paper.
Cover and let rise again for another 20 minutes.
Melt the remaining butter and brush the swirls with it.
Bake in a preheated oven at 200°C (392°F), on the middle rack, for about 25 minutes.
