Brown the beef:
- In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain any excess fat.
Combine in the crockpot:
- Transfer the cooked beef and onion mixture to the crockpot. Add the tomato sauce, ketchup, Worcestershire sauce, chili powder, garlic powder, smoked paprika, mustard, cumin, black pepper, salt, cayenne (if using), and water. Stir well to combine.
Cook:
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, stirring occasionally. This allows the flavors to meld and the chili to thicken.
Serve:
- Spoon the chili over hot dogs and top with your favorite toppings, such as shredded cheese, diced onions, or jalapeños.

Make-ahead: This chili can be made a day in advance and reheated in the crockpot before serving.
Thicker chili: If the chili is too thin, let it cook uncovered on high for 30 minutes to thicken.
Freezing: Store leftover chili in an airtight container and freeze for up to 3 months. Reheat in the crockpot or on the stovetop.
