Ingredients:
- 2 large onions (cut into thick rings)
- 1–1½ cups mozzarella cheese (shredded or sliced)
- 20–30 mini pepperoni slices
- ½ cup pizza sauce
- ½ cup flour
- 2 eggs, beaten
- 1 cup breadcrumbs (Italian-style works best)
- ½ tsp garlic powder
- ½ tsp Italian seasoning
- Oil for frying (or bake option below)
Instructions:
1. Prep the onion rings
- Slice onions into thick rings
- Separate into pairs (one slightly bigger than the other)
2. Stuff them
- Place a smaller ring inside a larger one
- Fill the gap with mozzarella
- Freeze for 30–45 minutes (helps keep shape)
3. Bread the rings
- Coat in flour → dip in egg → coat in breadcrumbs mixed with garlic + Italian seasoning
- Repeat egg + breadcrumbs for extra crunch
4. Cook
Fry method:
- Heat oil to 350°F (175°C)
- Fry 2–3 minutes until golden and crispy
Bake method:
- Place on lined tray
- Spray lightly with oil
- Bake at 400°F (200°C) for 18–22 minutes, flipping halfway
5. Add pizza topping
- Spoon a little pizza sauce on each ring
- Add pepperoni
- Sprinkle extra mozzarella
6. Final melt
- Broil or bake 2–3 minutes until cheese is bubbly
