Pepperoni Mozzarella Onion Ring Pizzas

🛒 Ingredients:

  • 2 large onions (cut into thick rings)
  • 1–1½ cups mozzarella cheese (shredded or sliced)
  • 20–30 mini pepperoni slices
  • ½ cup pizza sauce
  • ½ cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs (Italian-style works best)
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • Oil for frying (or bake option below)

👩‍🍳 Instructions:

1. Prep the onion rings

  • Slice onions into thick rings
  • Separate into pairs (one slightly bigger than the other)

2. Stuff them

  • Place a smaller ring inside a larger one
  • Fill the gap with mozzarella
  • Freeze for 30–45 minutes (helps keep shape)

3. Bread the rings

  • Coat in flour → dip in egg → coat in breadcrumbs mixed with garlic + Italian seasoning
  • Repeat egg + breadcrumbs for extra crunch

4. Cook

🔥 Fry method:

  • Heat oil to 350°F (175°C)
  • Fry 2–3 minutes until golden and crispy

🧀 Bake method:

  • Place on lined tray
  • Spray lightly with oil
  • Bake at 400°F (200°C) for 18–22 minutes, flipping halfway

5. Add pizza topping

  • Spoon a little pizza sauce on each ring
  • Add pepperoni
  • Sprinkle extra mozzarella

6. Final melt

  • Broil or bake 2–3 minutes until cheese is bubbly
