How to Make Oklahoma Nut Candy
1. Prepare Your Pan
Line an 8×8-inch baking pan with parchment paper or lightly butter it. This makes it easier to remove and cut the candy later.
2. Cook the Base
In a medium saucepan, combine sugar, milk, and butter.
Place over medium heat, stirring constantly until the butter melts and the sugar dissolves.
3. Boil to the Right Temperature
Once the mixture is smooth, bring it to a steady boil. Continue cooking without stirring until the mixture reaches the soft-ball stage (around 236°F / 113°C) on a candy thermometer.
If you don’t have a thermometer, drop a small bit into cold water — it should form a soft, pliable ball that flattens when pressed between your fingers.
4. Add Flavor and Nuts
Remove the saucepan from the heat. Stir in vanilla extract, salt, and the chopped nuts. Mix well until everything is evenly coated and the candy starts to thicken slightly.
5. Pour and Set
Quickly pour the mixture into your prepared pan, spreading it evenly with a spatula.
Let it cool at room temperature until firm — usually about 1 to 2 hours.
6. Cut and Enjoy
Once set, cut the candy into squares or small bars. Store in an airtight container at room temperature or refrigerate for longer freshness.
