Chicken and Veggie Rice Bake Recipe

Inspired by a famous restaurant technique, this all-in-one bake is the ultimate comfort meal. Tender, spiced roast chicken rests atop a bed of luxuriously creamy rice and fresh vegetables. It’s an impressive yet surprisingly simple dish perfect for both weeknight dinners and entertaining.

Ingredients

For the Chicken:

  • 1 whole chicken (approx. 1.5 kg / 3-4 lbs)

  • 1 tsp sweet paprika

  • 1 tsp turmeric

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp salt

  • 1 tsp black pepper

For the Creamy Rice & Veggies:

  • 500g (2 ½ cups) long-grain white rice, rinsed

  • 400ml (1 ⅔ cups) cooking cream

  • 2 medium carrots, peeled and sliced into rounds

  • 1 zucchini, halved lengthwise and sliced

  • 1 red bell pepper, chopped

For the Flavor Paste:

  • 1 medium onion, roughly chopped

  • 2 ripe tomatoes, quartered

  • 1 yellow bell pepper, deseeded and chopped

  • 1 red bell pepper, deseeded and chopped

  • 4 garlic cloves

  • A large handful of fresh parsley
